An ancient recipe of the Caspian peoples, a true «gastronomic nostalgia» of Astrakhan citizens and black caviar connoisseurs. Pressed caviar is salted in a hot tuzluk (salt solution), giving it a brinish and rich flavour. It is then pressed so that one cuts it with a knife like bread.
